A couple years back my daughter and I stopped eating meat and I became a raw vegan, she, a vegetarian. The last couple months, due to weather, busyness and health issues, we have started eating freezer section processed items which although vegetarian, are probably not very good for us. So I’m thinking that it’s time to start cooking up a batch of vegetarian yum- full- ness that we can eat instead… my tendency is to make the raw vegan for part of a meal, get bored, and pull vegetarian nuggets out of the freezer. Hers is to have several quesadillas.
I hope we will do better in the future.

Do you like stir fry? I will pretty much throw any veggies I have on hand in my wok with a little olive oil, but one of my favorites is a cabbage stir fry!

OK, didn’t want to write it all out if you don’t. My recipe: 2 med chicken breasts, cubed (which you obviously would omit) 1 T olive oil, 3 Cups cabbage (I like to buy the bags of shredded cabbage rather than the heads), 1 Medium red bell pepper, 1 small head of broccoli, cut into florets. Heat olive oil in wok, cook chicken cubes to 160 degrees, add raw veggies and stir fry 3-4 minutes or until veggies just barely soften. Then I mix in a dressing made with 2 Tablespoons mayo and 2 Tablespoons soy sauce just before serving to give it a little added flavor. It’s one of my favorite go-to meals 🙂
